Fats, Oils, And Grease (FOG)

Fats, Oils, and Grease (FOG) cause many problems in sanitary sewer lines. FOG builds up on the sides of the pipes, causing sewer blockages that result in sanitary sewer overflows. The costs of increased maintenance on the sewer lines to prevent blockages are high. The city has implemented the FOG Reduction Program to minimize FOG in our sewer system and meet King County Metro requirements for sewer discharge.

Program Requirements

Any establishment that serves or prepares food where FOG may be introduced to the sanitary sewer system shall complete a FOG Control Plan as part of the business license application process. These businesses include, but are not limited to, restaurants, cafes, lunch counters, cafeterias, bars, clubs and hotel, hospital, factory or school kitchens.

The FOG Control Plan outlines the practices a business will implement in order to minimize the fats, oils and grease entering the city sewer system. It includes Best Management Practices and cleaning frequencies for grease retention devices (grease traps, grease interceptors, etc.).

Since the 2009-2010 business year, a complete FOG Control Plan is required for a business license. Once the FOG Control Plan has been approved, it may be submitted to the city on an annual basis for review.

Since 2010, issuance of a business license requires FOG Control Plan approval by the City.
